Creamy Berry and Cauliflower Smoothie

Creamy Berry Smoothie with Cauliflower, say what???? Cauliflower in a smoothie? I know it sounds completely crazy, but I promise you, you and your kids will never guess! This smoothie tastes like the creamiest berry smoothie, with the added bonus of more than a serve of veggies!

This recipe was actually a request from one of my readers. Okay, so they didn’t actually request a cauliflower smoothie… They asked for a berry flavoured smoothie with hidden veggies. I was going to be boring and just go with the old baby spinach (which is in there, too). But then I thought, no, I can do better. There must be a vegetable that I can put in that will work really well with berries.

This Creamy Berry and Cauliflower Smoothie recipe does take a bit of prep work, because you need to steam and freeze the cauliflower in advance. Please don’t try to skip this step by using the frozen cauliflower in the supermarket. Firstly, most of those packets have warnings on them saying they have to be cooked before consumption, and secondly, they don’t taste anywhere near as nice as if you do the cauliflower yourself.

I also don’t recommend using raw cauliflower, as it has a much stronger taste. You could make this smoothie without freezing the steamed cauliflower first, but I do find that the frozen cauliflower doesn’t have as much taste. If you use unfrozen cauliflower, add some extra ice to keep the smoothie cold.

To Make Creamy Berry and Cauliflower Smoothie

This recipe uses cashews to make it creamy, but you could easily replace these and the water with soy or oat milk if you’re trying to avoid nuts.

This recipe requires you to make the cauliflower a few hours in advance, or even overnight. You could easily make up a batch at the start of the week (or possibly month?) and store them in a sealed container in the fridge.

Steam the cauliflower until just tender, then rinse with cold water until cooled.

Spread out on a lined baking tray in a single layer and place flat in the freezer until frozen.

To make the smoothie, place the ingredients in the blender with the liquid at the bottom. Blend until smooth.

Creamy Berry and Cauliflower Smoothie

Servings 2

Ingredients
  

  • 1 cup Cauliflower florets
  • 2 cups Water
  • 2 tbs Maple Syrup (or two dates)
  • 1 tspn Vanilla Essence
  • 1/2 cup Raw Cashews
  • 1 medium Banana
  • 1/2 cup Rolled Oats
  • 2 cups Frozen Mixed Berries
  • 1 handful Baby Spinach

Instructions
 

Cauliflower

  • Prepare a baking tray by lining with a sheet of baking paper. You could also use a silicone sheet.
  • Steam cauliflower florets until soft.
  • Rinse cauliflower in cold water to cool it. Once cool, spread over prepared tray in a single layer. Freeze for approximately 4 hours or overnight.

Smoothie

  • Add all ingredients to a blender, with the liquid at the bottom. Blend until smooth.
