Vegan Lunchbox Recipes – Pizza and Choc Chip Muffins

This week’s vegan lunchbox recipes can both be frozen ahead, so your lunches will be super easy! Just bake both on Sunday, store them in the freezer, and you can grab what you need each morning. Just think how easy your mornings will be! Well, ok, maybe not your whole morning….. but at least lunches will be easy!

This week’s recipes are vegan pizza and high protein chocolate chip muffins. These are two of my kids’ absolute favourites. Their lunchboxes always come home completely empty when I make these!

Vegan Lunchbox Pizza

Vegan pizza probably isn’t one of the first things that comes to mind when you think of a healthy lunchbox recipe. But these bases have a mix of chickpea and wholemeal flour to give them an extra protein boost. Plus, who doesn’t love pizza?

My kids normally just have plain cheese and tomato pizzas, but the sky is the limit for topping choices, really…. And pizza toppings are a great way to get extra veggies in. You could try pineapple and corn with some BBQ sauce, or my favourite – olives, pineapple and capsicium. There are also a lot of vegan meat alternatives out there that work really well on pizzas too.

The pizza recipe actually makes 4 bases, so we normally have 2 for dinner on a Sunday night, and freeze the other 2 pizzas for lunches. So you’ve got Sunday dinner sorted, as well as your lunches!

High Protein Choc Chip Muffins

Your kids will love these vegan chocolate chip muffins in their lunchbox, and they’ll never guess that they’re full of high protein beans! I have made these for all of my kids’ friends, and even the fussiest of them gave the muffins a 9.5/10. You might even want to make a double batch so you’ve got enough for your own lunches.
