Weekly Lunchbox Recipes | Choc Weetbix Balls and Bean and Corn Quesadillas

Nut free school lunches are hard! There’s no question about it. So, every week, I send new nut free vegan school lunchbox recipes to my subscribers.

This week I’m sending the recipe for nut free Choc Weetbix Balls, and Bean and Corn Quesadillas. I remember every school fete and carnival would have someone selling weetbix slice (maybe it’s just an Aussie thing?). These Choc Weetbix balls are a healthy version of that slice (and high in iron and protein!). If you don’t have Weetbix, you can replace it with a crunchy granola, or chopped nuts and seeds.

I love these quesadillas, because you can make a batch ahead on Sunday and freeze for the week. Or, they’re fast enough that you can throw one together in the morning if you need something quick and easy. Just cool it in the freezer for a few minutes before you pack it in the lunchbox.
